Singapore food courts are not food courts — they're hawker centres, an open-air culinary tradition recognised by UNESCO in 2020. Many of the world's most acclaimed dishes are served here for a few dollars, by stallholders who have cooked the same plate for forty years.

1. Hainanese chicken rice

The national dish. Poached chicken, rice cooked in chicken fat and pandan, three chilli-ginger sauces. Tian Tian at Maxwell Food Centre is the famous one; Sin Kee on Holland Road is the local favourite.

2. Char kway teow

Smoky stir-fried rice noodles with cockles, Chinese sausage and bean sprouts. The dish hinges on 'wok hei' — the breath of the wok. Outram Park Fried Kway Teow at Hong Lim Market has been doing it since 1973.

3. Laksa

Coconut curry noodle soup, Peranakan style. 328 Katong Laksa for the famous version, Sungei Road Laksa for the heritage one served on a Friday morning over a charcoal fire.

4. Hokkien mee

Wok-fried prawn and pork noodles in a stock-soaked finish. Hong Heng at Tiong Bahru, Geylang Lor 29 for the legendary version.

5. Chilli crab

The biggest splurge — get it at Jumbo East Coast with mantou buns to mop the sauce. For pepper crab, go to Long Beach.

6. Satay

Charcoal-grilled skewers with peanut sauce. Lau Pa Sat satay street opens nightly when one street closes to traffic. Order across multiple stalls.

7. Roti prata

Flaky South Indian pancake with curry. Best at 24-hour spots like Mr & Mrs Mohgan's in Joo Chiat. Get it plain, with egg, or 'tissue' style for the dessert version.

8. Bak chor mee

Minced pork noodles with vinegar, chilli, fish, mushrooms. Hill Street Tai Hwa earned a Michelin star for it; expect 90-minute queues.

9. Kaya toast and kopi

Breakfast staple: thin charcoal-grilled bread with coconut-egg jam, soft-boiled eggs in dark soy, and strong kopi. Ya Kun Kaya Toast chain, or the original Killiney.

10. Ice kachang

Dessert in 34°C heat: shaved ice over sweetcorn, red bean, jelly, syrups and condensed milk. Any hawker centre delivers; Annie Peanut Beancurd at Toa Payoh is a classic.

Practicalities

'Chope' your seat by leaving a pack of tissues on the chair before queueing. Cash helps but most stalls now take PayNow QR. Visit major hawker centres at 11.30 a.m. or 2 p.m. to dodge the rush.
